I have been eating my favorite example of salami for over 12 years from a phenomenal producer in Piedmont by the name of Luiset . Luiset Piedmont Salami is otherworldly good! This salami is enough to make you want to sell your soul to the devil for just another bite.
I recently had the pleasure of visiting the Luiset pig farm and salumeria where all of their products are produced. My visit became one of the most informative and best days of my life in terms of trying to learn about the salami process. I was entranced with the story of the owner Gino who launched his business on a dream and a whim in his 20’s in 1970.
At the time, he worked for another salumeria in his town in order to hone his craft. After two years of working there, he learned enough to eventually open his own salumeria. This was a man that had a vision and dream to build an empire. He was so consumed by this innate desire to please and produce high quality local salami so that he could be in control of the process of the pig from birth to product.
His agrisalumeria is located in the foothills of the Swiss Alps in northwestern Piemonte where wines like Barolo, Barbaresco, Barbera and Dolcetto reign as kings over the land. This is an area rich in food, culture and wine with residents that are purists and serious about their food. His salami, which consistently ranks as top in the area, produces the following:
All of their products are artisanal and made without preservatives. Interestingly, they use solar panels to power all of their electricity and a natural water reclamation system; using plants purifies all of their water after using so they may reuse it.
Luiset has a total of three stores – one in Alba, one in Turin and the third located on their farm in Ferrere.
The immediate attention to quality is noticed with just one bite. The salami is one of the purest and highest examples of clean, pure sustainable farming that you can find in all of Italy. They have the award and recognition to prove this.
The family today, while still under the great tutelage of Gino, consists of his two children Chiara and Mauro who are equally humble and true to their origins, but remain steadfast in the commitment to quality of Luiset Piemonte Salami.
